Sustainable catering on IENS.nl

Restaurant owners need to be innovative to generate more customers and to lower their costs (e.g. reduction of food waste and energy use). Customers like to eat fair and sustainable food. Sustainable catering is emerging. Against this background, the famous Dutch online restaurant guide IENS.nl, information organization Milieu Centraal and CREM, united in a pilot project work together towards an economic healthier and more sustainable catering industry. In the pilot, new ways of cooperation between restaurant owners and their customers, are being identified to stimulate sustainability.

Customers who are informed about the sustainable catering initiatives, are more aware of their own roles in the process. During the project, important questions regarding customer communication will be addressed. Examples are: How can restaurateurs provide more effective information to their customers about consuming in a sustainable way? How can they communicate about their own sustainability performances? Are guests willing to provide information about their choice of menu (to reduce food waste) in advance and are they aware of the consequences in case of a ‘no show’ when a reservation has been made? The participating restaurant owners will present their sustainable initiatives on IENS.nl. The pilot project runs during a six month period in the region of Amsterdam halfway 2011.

De Koninklijke Horeca Nederland and Stichting Vakbekwaamheid Horeca have committed to the project. Both organizations operate as a Board of Advisors of the project.
